It just has to be done, a separate honour, dedicated blog recipe simply for the Chocolate Rock Cakes!! Rock cakes have such a lovely texture. Equally as delicious with cold or hot drinks. When I was a child they were accompanied with a large glass of cold milk. As an adult, a steadfast loyal friend to the mug of mocha coffee :)
They're so scrumptious, really quick & easy to make but the echos of pleasure last a life time :) oooh & theyre also very versatile. My Mam sometimes makes hers with Mars Bars if she runs out of chocolate . . you can make them with anything you prefer.
Emily's Rock Cakes :)
Ingredients
8 oz Self Raising Flour
4 oz Caster Sugar
4 oz Butter
4oz Chocolate ( use the best chocolate you can afford
as opposed to cooking chocolate)
1 egg
Dash of Milk
Method
- Sieve SR Flour into large mixing bowl
- Add sugar
- Cut up butter into small chunks
- Rub together until breadcrumbs
- In a separate dish beat the egg
- Add the beaten egg to the breadcrumb mix
- Mix in with knife
- Once all ingredients stick together, leaving bowl clean, dough is perfect
- Cut the bar of chocolate up into small chunks
- Add into bowl on top of dough
- Mix the chocolate chunks into the dough mixture
- Usine a large spoon scoop our a spoonful of mix & add to a lined & greased baking tray
- Place evenly onto baking tray with nice space between each Rock Cake
- Add to pre heated oven for 15 - 20 minutes
- Remove from oven, allow to cool down before serving.
- ENJOY!!!
This batch of rock cakes were made with the only chocolate I had in the pantry, bubbly chocolate!! Which a actually didn't taste as nice as usual.
Mmmmm!!!! I have never made rock cakes, but they look soooo tempting! And you make it sound so easy that I will give it a try! My older daughter will love them just as much as I will! Thanks for sharing! :)
ReplyDeleteAh Manu, I promise they're soo easy & soo tasty .. all can be rubbed in by hand too. .. be warned you will be asked to make them every week!! They're great for lunch boxes. I would however suggest using a lovely chocolate like Cadburys or the Aussie equivalent, I used this cheaper supermarket brand with holes .. they were okay but not as nice as usual. Let me know how you get on . . :)
