Spaghetti Pepporoni

I love utilising ingredients & time, just using up whatever I have in the fridge or pantry there & then without any planning.  Especially when time is of essence & dear hubby is in a hurry to get back to work. Today was one of those times. I had 20 mins, he needed something substantial as he was going to be out til later than our usual dinner time. So something that would fill & last him longer than a usual lunch time sandwich!!  I grabbed what I could see from the first shelf of the fridge, I then grabbed a half opened package of pepperoni, then on route to hob grabbed a couple of almost empty bags of pasta from the pantry. (I could see one wouldn't be enough, so thought I'd use up the 2 together)
By the time I reached the hob, the recipe was created . ..  a spicer kinda carbonara  . . needing one cauldron & one saucepan  ..  10 mins cooking time . ..

 Ingredients 
Pepperoni, Chorzio, Salami
Red Onion
Mushrooms
Garlic
Parmesan Cheese
Cream/Milk
Sweet chilli dip/sauce/dressing etc
Butter
Rice Spaghetti
Linguine.

 Method 
  • Boil kettle.
  • Add rice spaghetti & linguine to a large saucepan

  • Add large pinch of salt. Add boiling water over the pasta & cook for 10 mins.
  • Top, tail & peel onion. Half & slice into thin half moons.
  • Wash the mushroom, tail them & slice into strips.
  • Add knob of butter to large cauldron style pan.
  • Melt butter add red onion slices.
  • Crush & dice garlic.
  • Add garlic & mushrooms to onion. Saute til slightly brown.
  • Third the pepperoni circles, separate & add to onions, mushroom & garlic.


  • Sizzle all ingredients
  • Quarter doz or so cherry tomatoes, add to cauldron.


  • Sizzle & stir.
  • Add sweet chilli dressing (or something similar like a chilli dip)
  • Sprinkle a covering of parmesan cheese over the pepperoni mixture
  • Take off the heat & stir in some single cream (or milk)
  • Add back to heat & warm through
  • Drain pasta, add spaghetti & linguine to the pepperoni mix.


  • Toss & coat spaghetti & linguine with veggies, pepperoni & creamy spicy sauce

  • Serve  into warmed bowls & enjoy

  • The great thing about this kinda cooking is you can almost use anything u you have in the fridge. I had a dash of cream left over but milk would've been fine too. The pepperoni was a mixture of 3 different kinds. Onion, garlic & mushroom go with any flavours . ..  chilli dip gave it a nice kick :)
  • It was surprisingly very tasty & took all of 15 mins total :)  Do try it sometime  :)
